I have gone through all your lectures but in trying to practise questions in the revision kits, they look extremely detailed and daunting compared to how you teach them in bits and pieces. I know what to do generally though but how to start or where to start seems overwhelming.
How do you suggest I overcome this? Are there videos that treat extremely detailed questions like this or something?

Probably the biggest problem with P4 is indeed that many topics are examined within the same question.
You can only overcome this by practicing more and more, and learning from your mistakes.
You will find that I have recorded lectures working through a few Question 1's from past exams where as well as obviously working through the technical content, I also discuss the approach to the questions and to getting the marks. I will add more lectures over time.

Gamma values are one of the Greeks and are explained on page 66 of the free lecture notes (and the lectures that go with the chapter).
You cannot be required to calculate them, but they measure the rate at which delta (N(d1)) changes over time.
