Do our textbooks (Kaplan, BPP or Opentuition Notes) cover all range of issues of all the required IASs and IFRSs that are included in the exam question???

All the textbooks cover all the issues required in the exam in consummate detail. Our notes focus more on the essentials to make comprehension a bit easier.
