in some circumstances, instead of using the given mean in the question we have to use
z=(x-mean)/sigma
can u please tell under which circumstances do we use this rather than the mean given?

I don’t know what you mean by writing ‘instead of using the given mean’. The tables always give the probability of being between the mean and some other value.
