last time i booked the F7 exam which was June, i chose the UK version, i have since booked a re-sit and have noticed this isn’t an option anymore, is it just the international variant now.

Yes, that’s correct. With effect from December 2014 inclusive, there is no longer a UK variant neither for F7 nor F8
