Your choice! Which do you want to do? Where do you work? Where do you intend working in the future when you qualify? Basically, which variants do you WANT to do?
If you’re asking which variant is easier ….. the answer is “Neither” they are both equally tricky

Can you please explain Pros and Cons of each variant? I currently live in the UK and hoping to be here for a foreseeable future (though may not be for a lifetime!). I am not worried about easier option. I want to choose the one which is more acceptable and opens up more opportunities.

Given that you’re still on F level, and given the likelihood that the UK will be accepting International Standards in the near future, probably your better choice would be international for both F7 and F8
If you compare the Uk variant papers with the corresponding International papers you’ll find that there really is VERY LITTLE difference so quite honestly it shouldn’t mater to your long term ambitions which variant you choose
