Hello
If we do not do/practice examples of OT notes , and instead only do whole exam kit (Kaplan), so would it be sufficient in order to pass F5?

There is no point in using the notes unless you are watching the lectures that go with them.
It is important that you study before using the exam kit. How you study is up to you. Either watch the lectures or buy a Study Text and study from there.
