I sometimes choose to write my answers in “ALL CAPS” to make it more legible, is this ok or is writing in all caps frown upon by the examiners?

If your ‘ordinary’ writing is very difficult to read then all caps might be better. However, this is generally a slower way to write so you would probably be able to say less.
