How does Accounting for numerical sequences of invoices helps us to ensure that sales transctns recorded have actually occurd? Or will it really ensure?

It doesn’t.

Numerical control of documents helps to ensure completeness, not occurence because missing documents can be identified and investigated. However, the presence of a document does not prove that the transaction was real.
