If friends (social arrangement) agree to exchange a sofa with assistance in packing, is there an intention to create legal relations?
How do you prove whether parties have intention to create legal relations? Is there a clear legal test to do so?

You haven’t told me what is the sofa being exchanged for! If its for the help with the packing then, yes, that would count as consideration
However, whether or not it was intended to create legal relations is dependent upon a court’s assessment of the balance of probabilities and just how successfully the claimant can establish a case
I believe that that answer also addresses the question in the second paragraph
